What is Mechoui?
Mechoui (also spelled méchoui or meshwi) is a traditional North and West African method of cooking a whole lamb or sheep over an open charcoal pit. The word comes from the Arabic mashwi, meaning “grilled.”
In Senegal, Mechoui is reserved for the most important occasions — weddings, Eid al-Adha, baptisms, and family reunions. The lamb is seasoned with a blend of spices, then roasted low and slow until the exterior is golden and crispy while the inside stays incredibly tender and juicy.
At Koité Grill, we've brought this tradition to Maryland. Our Mechoui is prepared by hand using the same charcoal-roasting technique passed down through generations.
