What is Dibi Lamb?

Dibi (pronounced “dee-bee”) means “grilled meat” in Wolof, the most widely spoken language in Senegal. In Dakar, dibi shops are on every corner — open-air grills piled with lamb, chicken, and beef, served with spiced onions, mustard sauce, and bread.

At Koité Grill, our Dibi Lamb ($28) is prepared exactly the way it's done in Senegal: bone-in cuts of lamb, seasoned with our house blend, and grilled over live charcoal until the outside is smoky and charred while the inside stays juicy and tender. Served with seasoned onions, mustard dipping sauce, and your choice of side.
