Every country has its own version, and the friendly “Jollof Wars” between nations are a staple of West African food culture.
But the original Jollof Rice comes from Senegal. The dish gets its name from the Wolof people of the Senegambia region, and the Senegalese version — called Thieboudienne (pronounced “cheh-boo-jen”) — is widely recognized as the ancestor of all Jollof Rice variations.
Senegalese Jollof vs. Nigerian Jollof vs. Ghanaian Jollof
While all versions share the core of rice cooked in tomato sauce, there are key differences:
- Senegalese (Thieboudienne): Cooked with stuffed fish, cassava, cabbage, eggplant, and a rich tomato-tamarind base. The rice absorbs deep, savory-smoky flavors. This is the original.
- Nigerian Jollof: Uses long-grain parboiled rice with a spicier tomato-pepper blend. Often served with fried plantains and grilled chicken.
- Ghanaian Jollof: Smoked with a distinct charred flavor, often cooked over firewood. Basmati rice is preferred.
